Undiagnosed, untreated gluten intolerance really is a pain. I'm just so happy that I found out what had been causing all this, and put a stop to it.

Although there are tests for coeliac (celiac) disease, most types of gluten intolerance* can only be discovered by an elimination diet - in other words, you have to stop eating gluten for a few weeks to find out if you should stop eating gluten! Sounds daft, I know, but that's the way it is. *(Not everyone who has gluten intolerance is suffering from coeliac disease, but everyone who has coeliac disease is gluten intolerant).

Gluten-free needn't be Taste-free

You've probably started trying to work out which foods you can’t eat, but really you’re beginning to think it would be easier to make a list of the things you CAN eat! It looks as if you need to cut out almost all pre-packed and processed foods for a start. Things are looking desperate - what are you going to eat?

Apart from anything else, I like to have friends round for a meal now and then. I couldn't serve up something cardboardy and tasteless out of a packet, just to stay gluten free. But why would I want to eat stuff that makes me feel bad when I'm supposed to be having fun? I didn't want that to change just because I had a health problem.

It takes a while to find all the little tricks and methods that make cooking into a joy instead of a chore. So I set to work to find out how to get by without wheat and all the products that include it. You'd be amazed just how much gluten is hiding in almost everything we eat every day!

Where does Gluten come from?

Gluten is found in the protein part of wheat, rye and barley. Another very similar compound is found in oats, so you may need to exclude these as well (although not everyone who is gluten intolerant is also intolerant of oats).

Other grains which may cause problems are spelt (a primitive form of wheat) and triticale (a hybrid wheat).

The gluten is the part of the grain which allows it to stretch — what gives bread its texture. Not that you can't get non-gluten bread, but it's usually more like cake, too crumbly — it just doesn't have the right texture. And the price leaves a pretty bad taste, as well!

Even though gluten is only in the protein part, if you have coeliac disease or are strongly gluten intolerant it is not safe to eat any part of the grains which contain it (including oats if you are affected by oat-‘gluten’), because there will still be a certain amount of gluten left behind after processing. Some authorities say you can't even eat something that has been in contact with gluten - the filling out of a sandwich, for example!

There are still plenty of foods you can eat, but it takes a certain amount of ingenuity at first. You can't live on jacket-baked potatoes for ever! This was the problem I faced some time ago. I tried to find substitutes in the shops: things that tasted good and didn't cost a King's ransom. Eventually, I realised that if I wanted to eat stuff I enjoyed, I would have to go about it in a different way. Gluten Free-Easy is the result.

Gluten free: who needs it?

If you’ve been diagnosed with gluten-sensitive enteropathy, coeliac disease, non-tropical sprue, coeliac sprue, primary malabsorption, ideopathic steatorrhoea or dermatitis herpetiformis, you are strongly gluten intolerant. You need to cut it out of your diet altogether.

  • irritable bowel syndrome (IBS),

  • Sjögren's syndrome

Common symptoms of gluten intolerance are:

  • flatulence (‘wind’) after eating gluten-containing foods;
  • abdominal distension;
  • stools (‘poos’) which are pale, bulky, greasy and smelly;
  • diarrhoea;
  • headache;
  • nausea and vomiting;
  • heartburn after pasta, pizza or pastry;
  • poor appetite and drowsiness after eating;
  • muscle cramps and spasms;
  • bone or joint pains;
  • anaemia, with weight loss;
  • obesity;
  • oedema (puffy swollen legs);
  • constipation;
  • any of the symptoms listed flaring up under stress.

If you suffer from any of the conditions listed in black on the left, or one or more of the symptoms listed on the right, your best option is to try living gluten free for a few weeks, and see if the situation improves. If it does (provided you do not suffer from any of the conditions listed in red), try eating a small amount of gluten, and watch for a reaction — be prepared for it to be greater than you expect!

But if you cook your own food, it can be as nice or as nasty as you like! And it needn't be a massive undertaking. A decent meal can be served up in 15-20 minutes, or as long as your veg take to cook (if that takes longer).

I guess we all have that to some degree, but for a child, it’s very important for their self-esteem that they don’t stand out from the crowd.

For an adult, having to cut out gluten is a nuisance, but to a child, it can be far more than that.

Once they start school, your children will want to bring their friends home for tea and what you serve up may make all the difference between them making firm friends who will come round to play regularly, or not.

When your child gets an invitation to a friend’s house, it's safest to offer to feed both children first, and send them round to play afterwards. But unlike other mums, it's not going to be easy just to pop into the shops on the way home and pick something up.
